Ingredients

  • 14.1 oz (400 g) well-drained farmer cheese or tvorog
  • 3.5 oz (100 g) eggs, two large
  • 1.4 oz (40 g) semolina
  • 2.8 oz (80 g) plain yogurt
  • 6.2 tsp (25 g) sugar
  • 1.1 tsp (5 g) butter for dish
  • 5.3 oz (150 g) mixed berries
  • 0.2 tsp (1 g) salt

Method

  1. Heat the oven to 350°F (175°C). Butter a small 7-inch (18 cm) baking dish. Mix yogurt and semolina and let stand for 15 minutes, additional to active preparation time.
  2. Mash cheese until smooth. Beat in eggs, sugar and salt, then the semolina mixture. Spread evenly in the dish.
  3. Bake for 35–45 minutes until lightly golden and the center reaches 165°F (74°C). If the top browns early, cover loosely with foil.
  4. Rest for 10 minutes, additional to cooking time. Cut in two substantial servings and top with berries.

Cook’s note: Use dense farmer cheese or tvorog. This is a two-serving main breakfast portion, rather than a small dessert slice.
