Sweet Potato Black Bean Turkey Soup

Ingredients

  • 12 oz (340 g) lean ground turkey, 93% lean
  • 1 small onion (100 g), diced
  • 2 garlic cloves (6 g), minced
  • 3 cups (720 ml) low-sodium chicken broth
  • 1 tsp (2 g) ground cumin
  • 2 tsp (10 ml) olive oil
  • 1 small sweet potato (200 g), cut into 1/2-inch (1 cm) cubes
  • 1 cup (170 g) cooked black beans, drained

Method

  1. Heat oil in a saucepan. Cook onion for 4 minutes, then add garlic and cumin and stir for 30 seconds.
  2. Add turkey and cook 5–7 minutes, breaking it into small pieces.
  3. Add broth and the listed soup additions, keeping spinach aside if using. Bring to a boil, then simmer 20–25 minutes until lentils, barley or root vegetables are tender and turkey reaches 165°F (74°C).
  4. For the spinach version, stir in spinach for the last 2 minutes. Divide the soup between two deep bowls.
