Mustard Green Bean Salmon Tray Bake

Ingredients

  • 2 salmon fillets, 6 oz (170 g) each
  • 12 oz (340 g) potatoes, cut into 1/2-inch (1 cm) cubes
  • 1 tbsp (15 ml) olive oil
  • 1/4 tsp (1.5 g) salt, or to taste
  • 1/4 tsp (0.5 g) ground black pepper
  • 2 cups (200 g) green beans, trimmed
  • 1 tbsp (15 g) Dijon mustard

Method

  1. Heat the oven to 425°F (220°C). Toss potatoes with half the oil on a large rimmed baking sheet; roast 15 minutes.
  2. Add the listed vegetables and salmon. Mix remaining oil with the listed seasoning and brush over the fish and vegetables; season with salt and pepper.
  3. Roast another 12–18 minutes until potatoes and vegetables are tender and salmon reaches 145°F (63°C) in its thickest part. If necessary remove the fish and continue cooking the vegetables.
  4. Divide the fish, potatoes and vegetables between two plates.
