Lemon Oregano Tofu Quinoa Bowls

Golden tofu cubes and vegetables on a bed of quinoa, with a simple sauce made in the pan. This version features lemon oregano flavors.

Ingredients

  • 14 oz (400 g) extra-firm tofu, drained and cubed
  • 1/2 cup (85 g) dry quinoa, rinsed
  • 1 cup (240 ml) water
  • 2 tsp (10 ml) olive oil
  • 1/4 tsp (1.5 g) salt, or to taste
  • 2 tbsp (30 ml) lemon juice
  • 1 tsp (1 g) dried oregano
  • 1 cup (150 g) halved cherry tomatoes

Method

  1. Bring quinoa and water to a boil in a small saucepan. Cover and simmer gently for 15 minutes; remove from heat and rest 5 minutes.
  2. Pat tofu dry. Heat oil in a nonstick skillet and cook the cubes for 8–10 minutes, turning until lightly golden.
  3. Add the listed vegetables and flavorings, plus 2 tbsp (30 ml) water. Cook for 5–7 minutes until vegetables are tender and tofu is hot throughout.
  4. Fluff quinoa and divide between bowls. Top with tofu, vegetables and the pan juices.
