Make it work
- If honey crystallizes in the fridge, stand the closed jar in warm water and stir once loosened.
- Scorched honey cannot be fixed by adding vinegar; use very gentle heat.

Ingredients
- 3/4 cup (250 g) honey
- 1 tsp (2 g) dried red chili flakes
- 1 tbsp (15 ml) red wine vinegar
Step-by-step method
- Choose the container
Use a clean dry heatproof jar and a small saucepan. This is a small refrigerated condiment batch, not a tested shelf-stable canning recipe. - Warm gently
Combine honey and chili flakes in the saucepan. Warm over very low heat for 3–5 minutes, stirring, just until the honey flows easily and small bubbles appear at the edge. Do not boil aggressively. - Steep off the heat
Remove from the stove, cover and steep for 20 minutes. Heat varies between chili brands; begin with the listed quantity rather than assuming all flakes are equally mild. - Add vinegar
Stir in vinegar. For a clear honey, strain out flakes through a fine sieve; leaving them in gives a textured condiment. Both options use the same original ingredients. - Cool and portion
Allow another 10 minutes to cool before transferring to the jar. Refrigerate after cooling. The batch yields about 12 small servings of approximately 20 g; use a clean spoon each time.

A sweet chili-infused honey for finishing savory dishes. The batch is intended for refrigerated home use and is not a canning formula.
Storage & reheating
- Refrigerate in a clean covered jar and use within 4 days. This formula has not been tested for room-temperature storage or canning.
- Warm only the portion needed; do not repeatedly heat and cool the entire jar.
