Roasted Pepper Olive Tuna Chickpea Salad

Ingredients

  • 2 cans (5 oz / 142 g each) tuna in water, drained to about 8 oz (225 g)
  • 1 can (15 oz / 425 g) chickpeas, drained and rinsed to about 1 1/2 cups (240 g)
  • 2 tsp (10 ml) olive oil
  • 1/4 tsp (0.5 g) ground black pepper
  • 1 cup (150 g) drained roasted red peppers, sliced
  • 1/4 cup (30 g) sliced olives
  • 1 tbsp (15 ml) red wine vinegar

Method

  1. Drain tuna and chickpeas well. Break tuna into bite-sized flakes in a large bowl.
  2. Prepare all the listed salad vegetables, fruit and herbs. Add them to the bowl.
  3. Add oil, pepper and the listed citrus juice or vinegar. Toss gently and divide between two plates.
