Lemon Oregano Chicken Couscous Bowls

Ingredients

  • 12 oz (340 g) boneless skinless chicken breast, cut into 1-inch (2.5 cm) pieces
  • 2/3 cup (120 g) dry couscous
  • 2/3 cup (160 ml) boiling water
  • 2 tsp (10 ml) olive oil
  • 1/4 tsp (1.5 g) salt, or to taste
  • 1/4 tsp (0.5 g) ground black pepper
  • 2 tbsp (30 ml) lemon juice
  • 1 tsp (1 g) dried oregano
  • 1 cup (150 g) halved cherry tomatoes

Method

  1. Put couscous in a heatproof bowl, pour over the boiling water, cover and rest for 5 minutes; fluff with a fork.
  2. Heat the oil in a skillet over medium heat. Add chicken, salt and pepper; cook 5 minutes, turning the pieces.
  3. Add the listed vegetables and remaining flavorings. Cook 5–8 minutes more, stirring and adding a splash of water if dry, until chicken reaches 165°F (74°C).
  4. Divide couscous between bowls and spoon the chicken and pan juices over it.
