Cucumber Dill Chicken Lentil Salad

Ingredients

  • 8 oz (225 g) cooked skinless chicken breast, chilled and shredded
  • 1 1/2 cups (300 g) cooked lentils, drained and cooled
  • 2 tsp (10 ml) olive oil
  • 1/4 tsp (0.5 g) ground black pepper
  • 1 medium cucumber (200 g), diced
  • 2 tbsp (8 g) chopped fresh dill
  • 2 tbsp (30 ml) lemon juice

Method

  1. Use fully cooked chicken that was cooked to 165°F (74°C) and promptly refrigerated. Put the chicken and cooked lentils in a large bowl.
  2. Prepare the listed produce and herbs; add to the bowl.
  3. Whisk the listed citrus juice or vinegar with the oil and pepper. Pour over the salad, toss gently and divide into two portions.

Cook’s note: Timing assumes chicken and lentils are already cooked. Keep chilled until serving.
