The quick answer
Give hot air room to circulate, reduce surface moisture and use the crisper plate or rack specified for your model. Cook in smaller batches when necessary. More time alone may dry the food without fixing a wet coating or blocked airflow.
In this guide
Check the basket before changing the temperature
An air fryer depends on circulation around food. A tightly packed layer of pieces, a solid liner or a missing crisper plate can change how the underside cooks. Use the approved basket arrangement and leave room according to the appliance’s instructions.
Capacity is not the same as a guaranteed crisping load. A basket may physically hold a large pile but produce better browning in smaller batches. Some models support specific stacked arrangements; follow that design rather than assuming every model must work identically.
Prepare a surface that can brown
Drain and dry ingredients as the recipe allows. A very wet marinade or loose batter behaves differently from a dry breading. Use a recipe designed for air frying rather than transferring a deep-frying batter without adapting the method.
A light, even coating of oil can help some breaded foods brown. Follow the recipe and the coating manufacturer’s guidance. Extra oil does not rescue crowded food, and not every food needs added oil.
Make a controlled second attempt
Reduce the batch
Leave the pieces with appropriate space, then compare the result using the same recipe.
Check the settings
Use the specified cooking mode, temperature and preheating routine. Different models do not produce identical results from one universal conversion.
Turn when directed
Shake or turn at the recipe’s checkpoint so hidden surfaces are exposed. Keep raw-food utensils separate from the finished food.
Check doneness separately
A crisp crust is a quality cue, not a meat-safety test. Measure poultry at 165°F / 74°C and use the appropriate endpoint for other ingredients.
Use liners without defeating the appliance
Choose only accessories approved for your model. Loose lightweight paper can lift toward a heating element when not secured by food; do not preheat with an unsecured paper liner. A liner that covers circulation holes may also reduce bottom browning.
| What you notice | What to change |
|---|---|
| Wet underside | Review crowding, drainage and liner coverage. |
| Pale dry breading | Check oil distribution and the breading method. |
| Burnt outside, raw inside | Lower temperature or adjust piece size; verify internal doneness. |
| First batch crisp, later batches poor | Clean away excess residue and review loading and cooking time. |
A few useful answers
Should I increase the heat to maximum?
Only if the recipe and appliance call for it. Higher heat can burn a coating before the center cooks.
Can I use wet batter?
Most loose deep-frying batters need a different coating or a method specifically developed for your air fryer.
Use the full recipe alongside these tips, and follow the stated care and safety limits of your equipment.
