The quick answer
Trim the crown and base, stand the pineapple on its flat end and cut off the rind in downward strips. Remove remaining eyes, quarter lengthwise and cut away the firm core. Slice the quarters into chunks or spears; for rings, slice the peeled fruit crosswise and remove each center.
In this guide
Prepare the board and fruit
A pineapple needs a board large enough for the fruit and a sharp knife long enough for controlled downward cuts. Put a damp towel under a moving board. Wash the rind before trimming so surface dirt is less likely to transfer to the flesh.
Do not start by gripping the spiky crown while slicing toward your hand. Lay the fruit on its side to remove the ends, then use the newly flat base to support it. Work at a steady pace; pineapple skin takes more resistance than soft flesh.
Remove rind and eyes
Trim both ends
Cut off the crown and a thin slice from the base. Remove enough to expose usable flesh and make a level base, without sacrificing large amounts of fruit.
Peel vertically
Stand the fruit upright. Slice from top to bottom, following its curve and keeping your free hand above and away from the blade’s route. Turn the fruit and repeat.
Remove dark eyes
Inspect the peeled surface. Cut out remaining tough eyes with small shallow cuts on the board. Do not dig deeply if one small eye can be removed separately.
Dry the work area
Juice makes the board and handle slippery. Pause to wipe them before changing from peeling to smaller cuts.
Chunks, spears and rings
| Shape | Method | Useful for |
|---|---|---|
| Chunks | Quarter lengthwise, remove the core from each quarter, then slice across. | Fruit salad and skewers |
| Spears | Core the quarters and divide them lengthwise. | Grilling or fruit platters |
| Rings | Slice the peeled fruit crosswise, then remove each firm center on the board. | Grilled fruit and upside-down cakes |
Choose thickness for grilling
Aim for roughly 1/2-3/4 inch / 1.3-2 cm slices or substantial spears. Thin slivers can fall through a grate or soften before they brown. Cut pieces consistently and follow the grill recipe’s temperature and timing rather than treating color as the only guide.
Refrigerate cut pineapple in a covered container and use it promptly. Freeze chunks separately for blending. The core is firmer than the surrounding flesh; remove it when tender pieces are the goal.
A few useful answers
Can I cut rings without a special corer?
Yes. Cut crosswise slices and remove their centers individually with an appropriate small cutter or careful board-based knife cuts.
Does rind color prove a pineapple is ripe?
No. Color is only one clue and varies with fruit and storage. Avoid spoiled, leaking or fermented-smelling fruit.
