Insalata Caprese

Caprese asks for good ingredients rather than elaborate cooking. Choose ripe tomatoes and fresh mozzarella, drain away excess brine and season shortly before serving so the plate stays fresh rather than watery.

Before you begin

US cup = 240 ml; tablespoon = 15 ml; teaspoon = 5 ml. Use listed gram weights for consistency; weights are raw or dry unless described as cooked or drained.

  • Use burrata instead of fresh mozzarella for a softer salad; add it just before serving.

  • Fresh mozzarella is the reference; low-moisture pizza cheese does not give the same texture.

Ingredients

  • 600 g / 21.2 oz Ripe tomatoes
  • 300 g / 10.6 oz Fresh mozzarella, drained
  • 30 ml / about 2 Tbsp Extra-virgin olive oil
  • 10 g / 0.3 oz Basil leaves
  • 3 g / about 1/2 tsp Fine salt
  • 0.5 g / about 1/4 tsp Black pepper

Step-by-step method

  1. Drain the cheese
    Remove mozzarella from its brine and drain in a sieve in the refrigerator for 15 minutes. Pat lightly with a clean towel without squeezing.
  2. Prepare tomatoes
    Wash and dry tomatoes. Remove hard cores and cut crosswise into 7 mm / 1/4 in slices with a sharp knife.
  3. Slice mozzarella
    Cut cheese into slices similar in thickness to the tomatoes. Wipe the knife between cuts if the cheese clings.
  4. Arrange the plate
    Alternate tomato and mozzarella slices on a platter, keeping them partly overlapped. Distribute any uneven end pieces among the portions.
  5. Season at the end
    Sprinkle salt over tomatoes, then drizzle the measured oil across the whole plate. Tear basil over it and add pepper.
  6. Serve promptly
    Divide into four equal portions and serve within 10 minutes. Keep prepared cheese refrigerated until assembly; do not leave the platter standing for hours.

  • Best assembled fresh. Refrigerate prepared components separately for up to 1 day.
